Dried alubia beans are a fantastic base for Mediterranean soups and stews. Also known as haricot beans, these medium-sized white beans will keep their shape even after long, slow cooking. Alubia beans are mild and creamy so you can pair them with full-flavoured ingredients like chorizo, smoked pancetta and smoked paprika.

Add the cooked beans to plant-based soups, meaty casseroles or a rich tomato sauce to serve with crusty bread. They’re great in salads, too. Once they’re cooked and cooled, toss them with piquillo peppers and a herb vinaigrette.

These dried beans come from Legumbres el Maragato, a small artisan producer based in Leon in northwest Spain. Packaged in a traditional cotton sack, these beans are a versatile addition to your pantry.
