Morelli’s black and white fregola is an eye-catching addition to your pantry. It’s made with durum wheat semolina and coloured with squid ink.

Fregola is a small, round pasta shape from Sardinia. You can add it to soups and rustic seafood stews. It can also be served at room temperature like orzo or couscous.

In Italy, fregola is cooked in a broth flavoured with wine, tomatoes and garlic. Add fish, clams or mussels to make it a meal. The pasta absorbs the broth so each mouthful is full of flavour.

Morelli pasta is bronze-drawn and dried slowly at low temperatures. This is the secret to the rough surface that helps sauces to cling.

Cooking time: 12 minutes.

Store in a cool and dry place, away from cereals.
